RICHARD BLAIS

Richard Blais is a successful chef, James Beard-nominated cookbook author and television personality. Known for co-starring on FOX's hit cooking competition, Next Level Chef, and as the first winner of Bravo's Top Chef All-Stars, Chef Blais enjoys his time off camera for the opportunity to meet resort guests including select group opportunities.

Chef Blais graduated from the Culinary Institute of America in New York and trained at The French Laundry, Daniel, Chez Panisse and el Bulli. He opened Four Flamingos Orlando and Key West with the Xenia Group and Hyatt Hotels. His additional restaurants include California English in San Diego and Ember & Rye in Carlsbad, CA. JOSUE PEREZ

Josue Perez is Chef de Cuisine at Four Flamingos. Together with Chef Blais, he leads development and evolution of the menu.

Chef Josue joined Four Flamingos in June 2023 as Sous Chef. Previously, he served as Executive Chef for Russell’s on Lake Ivanhoe and Sous Chef at Big Fin Seafood restaurant. His 15 years of experience also includes culinary positions at Seasons 52 and Bartaco.

Josue grew up in Puerto Rico and received his Culinary Certificate focused in Food and Beverage from Southeastern Culinary Academy.
